Rustic White Bean and Tomato Toast

When the weather warms up I begin to crave dishes tossed together with fresh seasonal produce.  The truth is we still have little while to go here in New England until the local tomatoes and peppers are ready but this dish certainly helps me fake it.

For this recipe you will need:

  • ½ cup olive oil divided
  • 1 large onion
  • 1 red bell pepper
  • 1 ½ tablespoons Victoria Taylor’s Sicilian Seasoning
  • 3 gloves of garlic, chopped
  • 2 tablespoons tomato paste
  • Thick slices of rustic bread, such as ciabatta
  • 1 cup of grated Parmesan cheese
  • 1 can of cannellini beans (or 1 cup of dry beans soaked and cooked)
  • 2 cups chicken or vegetable broth
  • 1 cup cherry or grape tomatoes, halved
  • Chopped parsley or basil for garnish

Preheat oven to 375°

Brush bread with oil and toast in oven for 5 minutes.  Flip each slice of bread and sprinkle with a little parmesan.  Toast in oven until well browned and dry- about 6 minutes.

Combine onion, garlic and red pepper in a food processor and pulse until  combined.

Add 2 tablespoons of olive oil to a sauté pan.  Add onion and pepper mix and sauté for 5 minutes.  Add Sicilian, tomato paste and 1 cup of stock.  Cook for 10 minutes.

Add beans, remaining stock and any remaining oil to the pan.  Cook for 10 minutes.

Add tomatoes and cook for 3 minutes then stir in ½ cup parmesan.

Serve over toast with grated parmesan and garnish.  Finish with salt to taste.

Sicilian Baked Feta Dip

This dip combines 3 different types of cheese that are melted together with garlic and Sicilian red sauce.  Bursting with flavor this is one addictive snack.

For this recipe you will need:

  • 1 cup of crumbled feta cheese
  • 3 cloves of garlic, minced
  • ½ cup mozzarella cheese, shredded
  • ½ cup cheddar cheese, shredded
  • 1 cup prepared Sicilian Red Sauce

Preheat oven to 400°

Use a small oven safe baking dish.  Spread the feta cheese on the bottom of the dish and sprinkle with chopped garlic.

Spoon the Sicilian Red Sauce on top of the feta cheese layer.

Combine the cheddar and mozzarella and sprinkle on top of the red sauce.

Bake in the oven for 15 minutes until the cheese is melted and bubbly. Serve with tortilla or pita chips.

Classic Sicilian Red Sauce

This recipe is so easy, but the flavor is amazing. Simply use it for pasta or as the base for any recipe calling for red sauce.

  • 1 large can (28 oz) crushed tomatoes, undrained
  • 5 tsp. Sicilian Seasoning
  • 1 Tbsp. extra virgin olive oil
  • sea salt to taste

Combine all ingredients in a sauce pan and simmer for 15 minutes before serving on pasta. Top with shaved fresh parmesan cheese.  Mediterranean Seasoning can be substituted for Sicilian Seasoning in this recipe.

Sicilian Tomato, Cucumber and Feta Salad

There’s a lot of flavor in this healthy, fresh and delicious salad.  You can easily customize this recipe and omit ingredients you don’t care for and add some that you do. 

For this recipe you will need:

  • · 4 medium tomatoes, cut 1/2 inch pieces
  • · 1 large cucumber, peeled, sliced 1/2 inch pieces
  • · 1 medium white onion, cut 1/2 inch pieces
  • · 1 large green pepper, cut 1 inch pieces
  • · 2/3 cup feta cheese chunks
  • · 3 Tbsp. extra virgin olive oil
  • · 1 Tbsp. red wine vinegar
  • · 2 Tbsp. Victoria Taylor’s Sicilian Seasoning

This salad is best served at room temperature.  If you are planning to make this dish ahead of time I would recommend mixing all of the ingredients except for the tomatoes and refrigerating.  Slice the tomatoes and toss them in the salad right before serving to prevent the cold air from affecting their texture. 

Combine all ingredients and stir gently. Let salad sit for 15 minutes or more before serving to allow the flavors to combine.

I am a big fan of feta cheese so I will often use a full cup in the salad (or more). Served with French or Italian bread, this greek style salad makes a satisfying light meal.
