Caesar Salad Dressing

I can be quite picky about caesar salad dressing  and this recipe does just the trick.  Loaded with flavor from roasted garlic, lemon, dijon mustard and parmesan cheese this dressing is sure to please. 

For this recipe you will need:

  • 1 Tbsp. Victoria Taylor’s Roasted Garlic Slices
  • 1 tsp. dijon mustard
  • 1 tsp. worcestershire sauce
  • 1 Tbsp lemon juice
  • ½ tsp. anchovy paste (optional)
  • ¼ cup mayonnaise
  • 2 Tbsp. good quality olive oil
  • 1 Tbsp. grated parmesan or romano cheese
  • freshly ground black pepper to taste

Allow garlic to soften in a tablespoon of hot water for 5-10 minutes.

Remove from water, place on cutting board with a pinch of sea salt, and mince the garlic until fine.  Mash the garlic into a paste with the flat side of the knife.

Mix together the garlic, mustard, worcestershire, lemon, and anchovy paste in a small bowl.

Stir in the mayonnaise then whisk in the olive oil slowly to incorporate fully. Mix in the cheese and season to taste with freshly ground black pepper.

Serve with romaine lettuce, parmesan cheese, grilled chicken and croutons or foccacia bread.

Focaccia Bread

This foccacia bread is loaded with flavor.  Perfectly crispy on the outside while chewy and moist on the inside this bread makes a great sandwich and pairs well any soup or salad.     

For this recipe you will need:

Dissolve honey in the warm water in a large mixing bowl and stir in yeast. Let stand for 5 minutes until the yeast softens and begins to foam.

Stir in 1 Tbsp. of salt, 1 Tbsp. olive oil and Victoria Taylor’s Fire-Roasted Onions.

Add 5 cups of flour until the dough comes together. Knead on a well floured surface until smooth and elastic, about 5 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in size, about 20 minutes.

Preheat oven to 400°.

Place dough onto an oiled sheet pan and flatten to cover the whole sheet evenly. Use the tips of your fingers to make indentations all over the dough spaced about 1 inch apart.

Drizzle the dough with 2 Tbsp. olive oil then sprinkle Victoria Taylor’s Mediterranean Seasoning, Parmesan cheese and additional sea salt if you choose.  Let rise for 10 minutes.

Bake in preheated oven 20 minutes until golden brown.

Shepherd’s Pie

Shepherd’s Pie is one of my favorite comfort foods.  Layers of ground beef, corn, cheddar cheese and creamy mashed potatoes are only made better with the addition of Toasted Onion Herb Seasoning. 

For this recipe you will need:

For the potatoes:

  • 4 large potatoes, peeled and quartered
  • 2 oz. butter
  • ¼ cup milk
  • ¼ cup cheddar cheese
  • salt and pepper to taste

For the filling:

Place potatoes in a large pot and cover with salted cold water.  Set over high heat, cover and bring to a boil.  Boil for about 35 minutes until potatoes are easily pierced with a fork and ready to mash. Drain the potatoes and place in a large mixing bowl.  Mash the potatoes and add the milk, butter, cheddar cheese, salt and pepper and continue to mash until smooth.

Heat olive oil in a large sauté pan. Add onion and cook until clear. Add ground beef and cook until well browned. Add ketchup and Toasted Onion Herb Seasoning.  Mix and cook for an additional 5 minutes. 

Spread the ground beef mixture in an even layer on the bottom of a large casserole dish.

Next, spread a layer of corn and top with ¼ cup of cheddar cheese.

Top with the mashed potato mixture and sprinkle with remaining shredded cheese.

Bake uncovered in oven preheated to 350° for 45 minutes.
