Rustic White Bean and Tomato Toast

When the weather warms up I begin to crave dishes tossed together with fresh seasonal produce.  The truth is we still have little while to go here in New England until the local tomatoes and peppers are ready but this dish certainly helps me fake it.

For this recipe you will need:

  • ½ cup olive oil divided
  • 1 large onion
  • 1 red bell pepper
  • 1 ½ tablespoons Victoria Taylor’s Sicilian Seasoning
  • 3 gloves of garlic, chopped
  • 2 tablespoons tomato paste
  • Thick slices of rustic bread, such as ciabatta
  • 1 cup of grated Parmesan cheese
  • 1 can of cannellini beans (or 1 cup of dry beans soaked and cooked)
  • 2 cups chicken or vegetable broth
  • 1 cup cherry or grape tomatoes, halved
  • Chopped parsley or basil for garnish

Preheat oven to 375°

Brush bread with oil and toast in oven for 5 minutes.  Flip each slice of bread and sprinkle with a little parmesan.  Toast in oven until well browned and dry- about 6 minutes.

Combine onion, garlic and red pepper in a food processor and pulse until  combined.

Add 2 tablespoons of olive oil to a sauté pan.  Add onion and pepper mix and sauté for 5 minutes.  Add Sicilian, tomato paste and 1 cup of stock.  Cook for 10 minutes.

Add beans, remaining stock and any remaining oil to the pan.  Cook for 10 minutes.

Add tomatoes and cook for 3 minutes then stir in ½ cup parmesan.

Serve over toast with grated parmesan and garnish.  Finish with salt to taste.

Sage and Onion Flatbread

This quick and easy flatbread is brimming with caramelized onions and crispy sage.  I made this flatbread to accompany soup but it’s just as delicious on its own served as an appetizer.

For this recipe you will need:

  • 16oz bag of prepared supermarket bread dough
  • 3 tablespoons olive oil
  • 3 tablespoons butter
  • 3 large white or yellow onions, thinly sliced
  • 5-10 fresh sage leaves, sliced lengthwise
  • 3 tablespoons Victoria Taylor’s Holiday Seasoning

Preheat oven to 350F.

Let dough rest at room temperature for 20 minutes. Pull and stretch dough into a 10 inch circle or rectangle. Place the flatbread on a 14 inch pan with small holes in it or a parchment lined baking sheet.

Caramelize sliced onions in oil and butter until soft and slightly brown, (about 10 minutes).

Combine the onions with Victoria Taylor’s Holiday Seasoning.

Spread onion mixture over bread dough. Place sage pieces over onion mixture.

Bake for 25 minutes until medium brown.

Roasted Moroccan Cauliflower

If you are unsure whether you are a fan of cauliflower you should try roasting it which completely transforms the flavor.  Add in some onions, apples and Moroccan Seasoning and you have an addictive little dish.

For this recipe you will need:

  • 1 head cauliflower, washed and cut up into 1 inch pieces
  • 1 sweet onion, diced
  • 1 granny smith apple, roughly diced
  • 1 macintosh apple, roughly diced
  • 2 tablespoons olive oil
  • 3 tablespoons Victoria Taylor’s Moroccan Seasoning, divided
  • salt to taste

Preheat oven to 350°

Oil baking sheet or line it with parchment paper.  Toss cauliflower with 1 tablespoon of olive oil and 1 tablespoon seasoning.  Toss apples and onion with 1 tablespoon olive oil and 1 tablespoon Moroccan Seasoning.

Spread the mixture on a baking sheet.  Sprinkle remaining Moroccan Seasoning over the top with a couple of grinds of sea salt.  Bake tossing every 15 minutes until done.  Approximately 30-45 minutes.

Sicilian Tomato, Cucumber and Feta Salad

There’s a lot of flavor in this healthy, fresh and delicious salad.  You can easily customize this recipe and omit ingredients you don’t care for and add some that you do. 

For this recipe you will need:

  • · 4 medium tomatoes, cut 1/2 inch pieces
  • · 1 large cucumber, peeled, sliced 1/2 inch pieces
  • · 1 medium white onion, cut 1/2 inch pieces
  • · 1 large green pepper, cut 1 inch pieces
  • · 2/3 cup feta cheese chunks
  • · 3 Tbsp. extra virgin olive oil
  • · 1 Tbsp. red wine vinegar
  • · 2 Tbsp. Victoria Taylor’s Sicilian Seasoning

This salad is best served at room temperature.  If you are planning to make this dish ahead of time I would recommend mixing all of the ingredients except for the tomatoes and refrigerating.  Slice the tomatoes and toss them in the salad right before serving to prevent the cold air from affecting their texture. 

Combine all ingredients and stir gently. Let salad sit for 15 minutes or more before serving to allow the flavors to combine.

I am a big fan of feta cheese so I will often use a full cup in the salad (or more). Served with French or Italian bread, this greek style salad makes a satisfying light meal.
