The dried red bell pepper adds a sweetness to this recipe that is just enough without being overwhelming. Easily customizable, you can add or omit ingredients to fit your taste. This quick and easy dish can be served warm or cold.
For this recipe you will need:
- 2 cups water
- ½ tsp. salt
- 1 Tbsp. olive oil or butter
- 1 box (10 oz) couscous
- ¼ cup Victoria Taylor’s Red Bell Pepper
- ½ cup scallions, chopped
- ½ cup feta, crumbled
In a medium saucepan bring water, salt, and olive oil to a boil. Stir in Red Bell pepper and couscous, cover, and remove from heat. Let stand covered for 5 minutes.
Let couscous cool for at least 10 minutes before stirring in scallions and feta. Salt to taste.
